Sourdough Discard Banana Bread (Dairy Free)

Equipment

  • 1 bread loaf tin

Ingredients
  

  • 3 extra ripe bananas medium
  • 1 egg
  • 1 tsp vanilla
  • 80 g dairy free butter melted miyokos, kite hill, etc
  • 100 g sourdough starter discard
  • 200 g unbleached flour all purpose
  • 2 tsp baking powder aluminum free
  • 100 g coconut sugar

Instructions
 

  • Preheat Oven to 350˚F
  • Mash bananas with a fork until they are smooth and mix in vanilla
  • Beat the egg and add in with mashed banana mixture
  • mix in melted butter to banana mixture
  • Add the sourdough discard to the banana mixture and mix together
  • In a clean bowl, mix all the dry ingredients together
  • Add the banana mixture (wet) to the flour mixture (dry) and stir until combined.
  • Pour into a greased loaf tin and bake at 350˚F for 1 hr or until a toothpick comes out clean
  • Let bread rest for 30min before removing from tin.
